Avocado Salad (Perdue)

The salad suggestion for the Purdue recipe, Green Chili Cheeseburgers. I have left the words salsa in scare quotes to give the flavor of how old this recipe must be.

1 tablespoon fresh lime juice
1 tablespoon “salsa”
½ teaspoon sugar
¼ teaspoon ground cumin
¼ cup olive oil
2 ripe avocados, peeled and diced
1 small red onion, sliced thinly

lettuce cups

In a salad bowl combine lime juice, “salsa”, sugar and cumin. Whisk in the olive oil. Add the diced avocados and the sliced red onion. Toss and serve in lettuce cups.
