Bal Arneson is an Indian American chef. She has a show on the Cooking Channel called “Spice Goddess”. This is the garam masala, the warming mixture of toasted spices that can be made simply by anyone who knows how to work an oven. And a grinder.
If you don’t have enough time to make it this way, here is a recipe using already-ground spices that you just mix together. It is even simpler, takes less time, and as I sometimes tell my spouse, time really is money.
1 tablespoon cumin seed
1 tablespoon coriander seed
1 tablespoon black peppercorns
5 – 6 green cardamom pods
3 – 4 brown cardamom pods
5 – 6 whole cloves
1 – 2 cinnamon sticks
Sprinkle whole spices on a baking sheet. Toast at 325 degrees F for 15 to 20 minutes. Remove them from the oven, and let them cool before grinding them. (Because hot, toasted spices might damage your grinder!) Then stir and store in a jar.
