It’s a New Year’s Day tradition to eat foods that set you up right for good fortune in the new year. It’s sympathetic magic. The greens you eat on this day are supposed to lead to lots of paper money; the sliced carrots, to coins. And here’s a plus. This dish in particular, having no meat, also is good fortune for pigs!
1 bag frozen, chopped kale, 16 ounces
2 carrots, peeled and sliced
1 small onion, chopped
1 teaspoon smoked paprika
¼ teaspoon salt
¼ teaspoon black pepper
1 cup water
Combine all ingredients in a pot, bring to a boil, reduce heat, cover and simmer 30 min, or until greens are soft and carrots are cooked. Serve with cornbread.
