Drained Yogurt

Line a strainer with a large round coffee filter.

Place 2 cups plain (not Greek-style) yogurt in filter.

Set the strainer over a bowl, deep enough to allow the liquid (whey) to drain.

Keep in fridge overnight.

You will wind up with yogurt having almost the consistency of cream cheese.

Have some in a bowl with honey drizzled on. They like it that way in Greece.

Why not use Greek-style yogurt in the recipe? Because drained yogurt IS Greek-style yogurt. Of course, you could just buy Greek-style yogurt. Just as long as you know there’s no secret formula, my work here is done. All you need is yogurt, a strainer lined with a filter, and reliable gravity. (Sorry, International Space Station astronauts!)
