The soy crumbles are meant to substitute for 12 ounces of browned ground beef. Different people have differing attitudes about how well they do that job. MorningStar Farms, Boca Burger, and Gimme Lean are companies I know of that make them.
1 large green pepper, finely chopped
1 large onion, chopped
3 cloves garlic, minced
2 cans (28 ounces each) plum tomatoes in purée
1 package soy crumbles
2 tablespoons balsamic vinegar
1 teaspoon dried basil
½ teaspoon sugar
½ teaspoon salt
12 ounces spaghetti, broken into thirds
¼ cup chopped fresh basil
2 tablespoons chopped parsley
1. Stir together green pepper, onion, garlic, tomatoes, soy crumbles, vinegar, dried basil, sugar and salt in slow cooker, breaking up tomatoes with a wooden spoon cover and cook on high 2 ½ hours, or on low for 4.
2. Boil 1 cup water. Into the sauce in the slow cooker, stir water, spaghetti, fresh basil and parsley. Cover and cook for 1 hour on high or until pasta is tender.
