Black Bean Pilaf with Ham Flavor

3 green onions, sliced
1 medium green pepper, cut into thin, bite-size strips
1 clove garlic, minced
1 tablespoon oil
2 ½ cups brown rice
3 and half cups water
1 packet chicken bouillon
1 packet Goya ham flavor
15-ounce can black beans, drained and rinsed
¾ teaspoon dried oregano
2 medium tomatoes, or 14 cherry tomatoes, cut into bite-size pieces

In a large pot, sauté the green onions, green peppers, and garlic in oil for 1 min. Add uncooked rice; cook and stir for 2 min. more. Stir in bouillon, ham flavor, black beans and oregano. Bring to a boil and reduce heat. Cook for 40-45 min., or until liquid is absorbed. Stir in tomato pieces. Makes approximately 4 servings.
