Brown Soda Bread

1 cup all-purpose flour
3 cups whole-wheat flour
1 ½ teaspoons baking soda
1 ¼ teaspoon salt
1 ¼ cups buttermilk

Preheat oven to 400°. Mix all dry ingredients in a large bowl. Make a well in the center and add the buttermilk gradually, using a knife to mix. As soon as those formed, turning onto a floured board and knead lightly. It should become soft and elastic. Shape the dough into a round loaf. Prick all over with a fork and cut an X on the top. Bake on baking sheet 35 min. When done, it should sound hollow on the top and the bottom. wrap immediately in clean tea towel and cool on a rack.
