Basic Rules for Broiling Steak

I wrote these down years ago, from a magazine or a newspaper. I’ve never used them, so I can’t claim any special knowledge of how to broil steak!

  1. Let steak stand at room temperature for 30 min. before broiling.
  2. Preheat the broiler for 15 min.
  3. Slash the fat edge around the steak every inch, so the steak will remain flat.
  4. Do not salt steaks before broiling.
  5. The thinner the steak, the nearer the heat. For instance, if the steak is 1 ½" – 2" thick, set 5" from heat; if 1" thick, set 3" from heat.
  6. Brown one side, flip once only, and brown the other side.
  7. Season steak, and serve.

Cooking Times
Rare
1" steak, 5 – 8 min. per side
1 ½" steak, 8 – 12 min. per side
2" steak, 12 – 16 min. per side

Medium
Add 2 min. to above times

Well
add 4 min. to above times
