I wrote these down years ago, from a magazine or a newspaper. I’ve never used them, so I can’t claim any special knowledge of how to broil steak!
- Let steak stand at room temperature for 30 min. before broiling.
- Preheat the broiler for 15 min.
- Slash the fat edge around the steak every inch, so the steak will remain flat.
- Do not salt steaks before broiling.
- The thinner the steak, the nearer the heat. For instance, if the steak is 1 ½" – 2" thick, set 5" from heat; if 1" thick, set 3" from heat.
- Brown one side, flip once only, and brown the other side.
- Season steak, and serve.

Rare
1" steak, 5 – 8 min. per side
1 ½" steak, 8 – 12 min. per side
2" steak, 12 – 16 min. per side
Medium
Add 2 min. to above times
Well
add 4 min. to above times
