Brisket – Smoky

This is one of the quintet of brisket recipes that you can make out of a basic recipe. They are:

Home-Style Stew
Texas Chili;
Italian Ragu;
Five-Spice Style.

1 beef brisket, approximately 3 pounds
1 tablespoon smoked paprika
1 teaspoon salt
½ teaspoon ground black pepper
1 large onion, chopped
4 cloves garlic, chopped
1 can (14.5 ounces) stewed tomatoes
1 can (14.5 ounces) low-sodium beef broth
¼ cup cider vinegar
¼ cup brown sugar

8 hamburger rolls
pickles
coleslaw

Season brisket with paprika, salt, and pepper; place in crockpot. Scatter onion and garlic over the meat. In a bowl, combine tomatoes, broth, vinegar, and sugar; pour over brisket. Cook on high 6 hours, or on low for 9 hours. Remove brisket and cool slightly. Slice or shred the meat, and stir back into the sauce. Remove meat with slotted spoon. Serve on hamburger rolls with pickles and coleslaw.
