We made this for the first time the other night, all because of my blogging these recipes. I used extra virgin olive oil and a ham slice in it. We all liked it, with one criticism, that the taste of the olive oil clashed with the taste of the ham. My advice is to either use a less flavorful olive oil or a less flavorful ham. 🙂
¼ cup lemon juice
¼ teaspoon black pepper
1/3 cup olive oil
½ cup grated Parmesan cheese, divided
1 pound bowtie or farfalle pasta
2 cups frozen peas
12 ounces cooked ham, cut in ¼" dice
- In a bowl, whisk together lemon juice, pepper, olive oil, and ¼ cup of cheese. Set aside
- Bring large pot of water to the boil. Add pasta. When it returns to the boil, add peas.
- 2 min. before end of pasta cooking time, add ham drain all at once, return to pot and mix in the dressing. Top with the rest of the cheese
