1 ½ cups broccoli florets
or
1 medium pear, chopped
1 medium red, green, or yellow sweet pepper, ¾" square
1 small onion chopped (approximately ½ cup)
2 tablespoons olive oil
12 ounces skinless, boneless chicken breasts, cut in strips
or
12 ounces turkey breast, cut in strips
1 can (10.75 ounces) condensed cream soup, either
cream of chicken
or
cream of celery,
or
cream of broccoli
½ cup water
1 teaspoon dried basil
½ cup shredded cheddar or Swiss cheese
12 ounces fettuccine, spinach or plain
- Use 1 tablespoon of oil in wok to stir-fry care or broccoli, sweet pepper, and onion for 3 – 4 min. Remove from skillet.
- Add the other tablespoon of oil to wok, add poultry strips, and stir-fry 3 – 4 min. or until no longer pink.
- Add condensed soup, water, basil to wok and mix thoroughly. Stir in sweet pepper mixture. Bring to a boil, reduce heat. Add cheese; cook and stir until cheese is almost melted.
Serve over hot cooked pasta
