Coffee Mousse (Perdue)

This is the desert suggestion for the meal, “Southwestern Lasagna”.

1 tablespoon plain gelatin
3 tablespoons water
3 tablespoons instant coffee powder
½ cup boiling water
1 cup mini marshmallows
2 tablespoons sugar
½ cup heavy cream
1 tablespoon vanilla

In a medium bowl, soften the gelatin in the 3 tablespoons water. Stir in the instant coffee powder, the boiling water, and the mini marshmallows. Stir until marshmallows have dissolved. Add the sugar, the cream, and the vanilla. Spoon into individual dessert bowls and let chill until set.
