This is the side dish suggestion for “Southwestern Lasagna”.
2 tablespoons red wine vinegar
¼ teaspoon chili powder
1/8 teaspoon ground cumin
¼ teaspoon sugar
¼ teaspoon salt
1/8 teaspoon ground black pepper
4 tablespoons olive oil
1 large red bell pepper, thinly sliced
½ cup diced red onion
2 avocados, peeled and diced
Romaine lettuce leaves
In a mixing bowl combine vinegar, chili powder, cumin, sugar, salt, and pepper. Gradually whisk in 4 tablespoons olive oil.
Toss with sliced red pepper, diced onion, and diced avocados.Toss well and serve on romaine lettuce leaves.
