Every day, we all, old or young, can hardly help showing our age. And speaking of old, my spouse and I got this recipe from our health insurer, US Healthcare, one of the early versions of what was then a new idea, the HMO. They sent every one of their subscribers a cookbook recipes that would keep them healthy. This one was a keeper, along with Baked Fish Provençal.
¼ cup tamari soy sauce
¼ cup water
1 teaspoon grated fresh ginger
or
½ teaspoon ground ginger
1 small clove garlic, crushed
2 teaspoons lemon juice
4 boneless, skinless chicken breasts (about 4 ounces each)
Couscous
In a bowl, mix together the marinade: tamari soy sauce, water, ginger, garlic, and lemon juice. Set aside.
In a non-reactive bowl or plastic storage bag, place chicken and cover with marinade. Marinate for 2 – 3 hours.
Cook on the grill. Serve with couscous
