This is a really good, really simple recipe. Thanks to Aminah, who feared we did not eat enough fish in this household. She was right, and it’s partly because when it comes to cooking fish, we’re kind of… at sea.
1 package (12 ounces) baby spinach
1 – 2 pounds of salmon fillet
½ teaspoon ground black pepper
¾ teaspoon kosher salt
2 teaspoons dried dill leaves
2 lemons, thinly sliced
¼ cup white wine
Wash spinach; put all of it in the bottom of a crockpot. Layer salmon on top, followed by seasonings. Top with lemon slices, and add the wine.
Cook on high for 2 hours.
