Spiced Turkey Couscous

My advice is to double this recipe; why use ½ can of anything? (See The Way of the Frugal Gourmand .)

1 medium onion, sliced and separated into rings
1 medium green pepper, cut into ¾ inch pieces
1 medium carrot, sliced
2 teaspoons chili powder
2 cups cubed cooked turkey
½ teaspoon ground ginger
half of a 15 ounce can of chickpeas, rinsed
half of a 15 ounce can of tomatoes
1/3 cup tomato paste
¼ cup raisins

hot cooked couscous or rice

  1. In a 2-quart microwave-safe casserole, combine onion, green pepper, carrot, chili powder, ginger, ¼ cup water & 1 teaspoon salt.
  2. Cover, cook on 100 percent power 5 – 7 minutes (or 10 – 12 minutes for a low-watt oven) or until crisp-tender; stir once
  3. Stir in turkey, chickpeas, undrained tomatoes, tomato paste and raisins. Cover, cook on 100 percent power 5 – 7 minutes or until hot, stirring once.

Serve over couscous or rice.

Serves 4.
