This is one of those recipes we got in the back of one of the parenting magazines (probably Parenting!), claiming that “your kids will love this”, isn’t a lock on it. So we tried it, and they ate it happily. And we parents liked it. That’s a win win!
2 cups cooked rice
6 ounce canned tuna in water, drained and flaked
one cup shredded cheddar cheese
6 tablespoons breadcrumbs
2 tablespoons minced onion
¼ teaspoon ground black pepper
2 eggs, slightly beaten
4 tablespoons butter or margarine
- In a large bowl, stir together rice, tuna, cheese, 4 tablespoons of the breadcrumbs, onion, pepper, and egg until well blended.
- Shape mixture firmly into 8 patties. Coat with remaining 2 tablespoons of breadcrumbs. (Patties can be prepared ahead and refrigerated until ready to cook.)
- In a large skillet, melt butter or margarine over medium. Add patties and cook until browned on both sides.
