Cajun Lentils

Starring the Cajun culinary trinity of celery, green pepper, and onions. Then add a bracing spoonful of prepared Cajun Seasoning. 

3 tablespoons light olive oil
2 large stalks celery, chopped
1 green bell pepper, chopped
1 medium onion, chopped
½ teaspoon salt
¼ teaspoon black pepper
1/8 teaspoon cayenne pepper
1 tablespoon Cajun seasoning
½ teaspoon salt

2 cups lentils, cooked

Heat olive oil in a pan; add celery, green or red pepper, and onion. Sprinkle with ½ teaspoon salt and sauté until vegetables are softened. Add black pepper, cayenne pepper, and Cajun seasoning; and the rest of the salt, if desired. Mix with the cooked lentils.
