Seasoning for Italian Sausage or for Tomato Sauce

If you wanted to make Italian sausage, this would be an excellent seasoning for them. I use it to give tomato sauce some sausage-like flavor, as these folks do.

2 tablespoons fennel seeds
1 tablespoon coriander seeds
2 teaspoons black peppercorns
2 tablespoons paprika, Hungarian or Spanish, sweet or smoky
4 tablespoons dried oregano leaves
5 tablespoons dried basil
2 tablespoons sugar

Optional for Hot Sausage
Cayenne pepper to taste
2 tablespoons red pepper flakes

1. In a dry pan over medium heat toast fennel and coriander seed along with the peppercorns, plus optional red pepper flakes, until very fragrant.
2. In a blender, grind the toasted seeds fine; pour into a bowl and mix in the paprika, oregano, basil, sugar, and optional cayenne pepper; cool.
3. Store in a jar. Use 1 tablespoon mix per batch of tomato sauce. I use four cans of peeled tomatoes (28 ounces each) in each batch.
