Yellow Split Pea Dal (from “Laurel’s Kitchen”)

I made a lot of this stuff in college. It really does make a great sandwich!

1 ½ cups yellow split peas
½ teaspoon salt
3 cups vegetable stock or water
2 tablespoons oil
1 tablespoon black mustard seed
½ green pepper
1 onion
1 teaspoon turmeric
½ teaspoon curry powder
juice of one lemon

Prepare peas by boiling them in salted vegetable stock for about 30 min. Cook them until they are tender but still retain their shape – rather like mashed potatoes. Set aside.

Chop onion and green pepper. Heat oil in a large heavy pan with lid. Add mustard seed to the hot oil and cover. Allow to brown but not to burn. This takes a short time. Peek at them very carefully – the seeds jump like popcorn. Stir in turmeric, Curry powder, onion and green pepper. Sauté until vegetables are soft. Stir this mixture into the peas along with the lemon juice.

Great with pita bread or as a sandwich.
