Banana Nut Muffins

1 ½ cups all-purpose flour
1 cup chopped walnuts
½ cup toasted wheat germ
½ cup brown sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
¼ teaspoon ground nutmeg
2 ripe bananas, mashed
¾ cup milk
5 tablespoons butter, melted
1 egg
cinnamon sugar, optional

1. Heat oven to 400°. Spray muffin cups with cooking spray. Line with paper liners.
2. Mix flour, walnuts, wheat germ, brown sugar, baking powder, cinnamon, nutmeg, and salt in large bowl. Stir in bananas, milk, butter, and egg. Mix until just blended.
3. Using an ice cream scoop, fill muffin cups evenly with batter. Sprinkle with cinnamon sugar, if desired.
4. Bake muffins until a skewer inserted into the centers comes out clean, 20-22 min. Cool for 1 min., then remove from pan and cool on a wire rack.
