1-2-3 Shortbread (Imperial Sugar)

2 sticks butter, softened
3 cups all-purpose flour
¾ cup granulated sugar
raspberry or strawberry jam

Preheat oven to 325°.

  1. Knead the flour into the softened butter, then knead in the granulated sugar.
  2. Press firmly into well-greased 8" square pan. Bake for 40 to 45 min. at 325°, or until a delicate brown.
  3. While still hot, cut in 36 squares; return to oven for a few minutes to dry out the edges. Cool in pan on wire rack. Spread with jam.
