2 Dozen Cupcakes

Another old family recipe here. There are three variations written down. Marked on the recipe card after the title, with a different pen and handwriting: “(1 ½, really)”. With that warning in mind, we begin.

1 ½ cups flour
1 cup sugar
2 teaspoons baking powder
1 tablespoon orange extract
½ teaspoon vanilla extract
½ teaspoon salt
2/3 cup milk
1/3 cup Crisco
1 egg

Preheat oven to 350°.

Grease 2 muffin tins, or put paper muffin liners in each cup. Sift together flour, sugar, baking powder and salt in large mixer bowl. Drop in the shortening, pour in 1/3 cup milk, vanilla and orange extract. With mixer at medium speed, beat 2 min., scraping bowl and beaters as necessary. Add rest of milk and egg; beat 2 min. longer. Place in muffin cups, two thirds full; if using liners bake 25 min.; without, bake 22 min.

Vanilla flavor: eliminate orange extract and replace with more vanilla extract.

Spice flavor: add 1 tablespoon molasses with the shortening; to the flour mixture add 1 teaspoon cinnamon, ½ teaspoon cloves, and ¼ teaspoon allspice.
