While my sister and I were growing up, Mom packed lunches for us that contained as little junk food as it was possible to contain. I remember this story from when I was in first grade. Back then, I might have envied someone who had a serving of potato chips in a waxed-paper bag, or some cookies, but I really did enjoy my everyday choice: bologna sandwich on white with mustard, followed by an apple.
Mom surprised me with this cake. I opened my lunch box and found a piece next to my apple and sandwich. It was remarkable to me, that in spite of her healthy-food scruples, she had put CAKE in my lunch, and a DELICIOUS cake like this one. That cloud-nine feeling remains with me to this day. Cake:
2 cups flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon salt
½ cup shortening
½ cup milk
2 eggs
1 cup raisins
1/3 cup chopped walnuts
6 ounces frozen orange juice concentrate, thawed
Topping:
1/3 cup sugar
1 teaspoon cinnamon
½ cup chopped walnuts
Heat oven to 350°.Grease and flour the bottom of a 13" x 9" pan.
- Measure ½ cup of the orange juice concentrate, and place with all other ingredients in a large bowl. Blend at low speed for 30 seconds, then beat for 3 min. at medium speed. Pour into pan.
- Bake between 40 – 45 min.
- In a small bowl, combine sugar, cinnamon, and chopped walnuts to create the topping. Drizzle remaining orange juice concentrate over the warm cake. Sprinkle with topping.
