This is the most basic meatloaf, ever. Beef, bread crumbs and egg, with something to bind them. There is no bacon on top, no ketchup to serve as a glaze. The only vegetable is a small onion, and the most interesting seasoning is celery seed. I used to not think very much of meatloaf, so when my future spouse invited me over to eat meatloaf with her family, I feigned interest and thought about being a good dinner guest. To my utter amazement, I could hardly stop eating this stuff! It really is funny – I was bored with meatloaves that were more complicated and had more ingredients, which by all rights ought to have been more interesting than I found them.
1 ½ pounds ground beef
1 cup bread crumbs
2 eggs
1 small onion, chopped
½ cup milk
salt, pepper, and celery seed, to taste
Bake at 350° for about 1 ¼ hours (or make into 24 meatballs and bake for about 15 min.)
