It’s a very plain, simple chili and my own recipe.
It’s named after the characters from the Doctor Who TV series – emotionless, mutated monsters who inhabit near-invincible killing machines. What they say to members of lesser races (which by definition is any and every other race) is always the same: “You will be exterminated!”
Okay, so it’s not *that* hot. If you were to add enough hotter New Mexico chiles, or cayenne pepper, or crushed chile peppers with seeds (Chile Caribe), then you could leverage this chili into an Extermination Level Event!
4 pounds beef, cubed
2 cans low-salt beef broth
olive oil
4 – 5 cloves garlic, crushed
2 medium onions, chopped
2 tablespoons New Mexico Chile
1 tablespoon ground cumin
½ tablespoon dried leaf cilantro

Sauté beef and batches in olive oil, in a nonstick skillet. Remove to stockpot. Add more olive oil and sauté onions and garlic in the skillet until translucent. The glaze with ¼ cup beef broth. Add onions, garlic, beef broth, and spices to stockpot. Bring to boil, and simmer for 1 ½ hours.
Reserve ½ cup hot broth and aside to cool. To the cool broth, add ¼ cup flour and mix thoroughly. Stir back into the pot and cook until the broth thickens.
