Suggested as a side dish for Turkey Chili Roll.
1 ½ tablespoons lemon juice
¼ teaspoon salt
¼ teaspoon ground black pepper
1/8 teaspoon sugar
1/8 teaspoon dry mustard
¼ cup olive oil
2 ripe tomatoes, peeled and diced
½ cup sliced radishes
OR
½ cup sliced jicama
¼ cup chopped fresh parsley
Lettuce cups
In salad bowl, combine lemon juice, salt, pepper, sugar, and mustard. Slowly whisk in the olive oil. Add tomatoes, radishes, and parsley; toss. Serve in lettuce cups.
