This is the suggested dessert for Purdue’s Turkey Chili Roll.
I include the recipe exactly as written, but I would much rather use canned pineapple and a covered baking dish to create the same effect only with much less trouble.
1 large pineapple
¼ cup rum
¼ cup light brown sugar
Preheat oven to 350°F. Lay the pineapple on one side and cut a slice from the upper side
cut fruit into cubes and discard the core. Mix fruit with rum and brown sugar. Wrap pineapple with foil and bake for 20 – 30 min. Serve with vanilla ice cream.
