Cranberry-Pear Chicken (Perdue)

1 pound boneless skinless chicken breasts
1 tablespoon vegetable oil, divided
salt and ground black pepper to taste
1 cup chopped onion
3 firm pears, peeled, cored, and diced
½ cup fresh cranberries
¼ teaspoon ground cinnamon
¼ teaspoon ground ginger

Trim off and discard visible fat from chicken. In a large non-stick skillet, over medium-high heat, heat 1 ½ teaspoons oil. Sprinkle chicken breasts lightly with salt and pepper. Brown for about 2 min. per side. Remove from pan and reserve. Add remaining oil to skillet and cook onions until softened, about 4 min. Add pears cranberries, cinnamon, and ginger. Stir to combine well. Place chicken on top of fruit mixture. Cover and simmer 10 – 12 min. until cooked through.
