Turkey Meatloaf

I think this meatloaf has become my favorite turkey meatloaf of all. Thanks to my sister, for passing it along! There is something for me about the combination of the spinach, herbs, and lemon juice that makes this almost addictively tasty.

2 cups breadcrumbs
1 onion, chopped
2 eggs
½ cup milk
1 teaspoon salt
1 ½ teaspoons dried basil
½ teaspoon dried thyme
½ teaspoon dried parsley
½ teaspoon black pepper
1 package (10 ounce) frozen chopped spinach, thawed and drained
2 pounds ground turkey
2 teaspoons fresh lemon juice

Heat oven to 350°F. Grease a large baking pan.

In a large bowl, beat eggs with milk, salt, basil, thyme, parsley, and black pepper. Add breadcrumbs, onion, spinach, turkey, and lemon juice. Mix well. Turn mixture out onto baking pan and form into a loaf. Bake for 1 hour or until done.
