Stir-Fry Turkey Fajitas

4 flour tortillas, 10" size
¼ cup low-sodium soy sauce
1 tablespoon sugar
2 tablespoons lemon juice
1 tablespoon cornstarch
¼ teaspoon crushed red pepper
1 medium onion, chopped
3 medium green, red, or yellow sweet peppers, cut in thin strips
3 cloves garlic, minced
2 tablespoons olive oil
12 ounces skinned, boned turkey breast, cut into thin strips.

Heat oven to 300°. Wrap tortillas in aluminum foil, and warm them in the oven.

Combine soy sauce, sugar, lemon juice, cornstarch, and crushed red pepper. Heat wok or large frying pan. Add 1 tablespoon oil, then stir-fry onion, sweet pepper, and garlic over medium heat, 3 – 4 min. Remove from skillet.

And the other tablespoon of oil. stir-fry  the turkey over medium-high heat 3 to 4 min. until no longer pink. Add soy sauce mixture. Cook and stir until bubbly. Add pepper mixture, heat through. Spoon onto tortillas and roll them up.
