This is how we roast turkey, according to a method which was publicized on the local radio station. We like the way it comes out.
Preheat oven to 450°.
Put 2 cups water in roasting pan along with the turkey; cover turkey completely with foil. For turkeys between 15 and 20 pounds, roast for 1 ½ hours; add 15 min. cooking time for turkeys larger than that. Remove foil and return to oven.
Reduce heat to 400° and roast for 1 hour.
