Spring Greens and Roasted Chicken

2 ¼ pound supermarket-roasted chicken

1 package (5 ounces) mixed greens, approximately 8 cups
2 cups sliced strawberries
4 ounces Gorgonzola cheese, crumbled
½ cup honey roasted cashews or peanuts
1 lemon, halved
3 tablespoons olive oil
¼ teaspoon salt
¼ teaspoon ground black pepper

Remove skin from chicken. Shred the meat (you should have approximately 3 ½ cups. Place greens on platter top with chicken, strawberries, cheese and nuts. Drizzle with lemon juice and oil; sprinkle with salt and black pepper.

Makes 6 main-dish servings
