2 tablespoons olive oil
2 green bell peppers, cut into strips
1 medium onion, sliced
1 can (14.5 ounces) diced tomatoes with jalapenos
½ teaspoon oregano
½ teaspoon hot pepper sauce
4 tilapia fillets (approximately 1 ½ pounds)
½ teaspoon salt
½ teaspoon ground black pepper
2 cups hot, cooked white rice
Heat oven to 350°. Spray a 13" x 9" x 2" baking dish with nonstick cooking spray. Heat oil in a large skillet over medium heat. Add peppers and onions; cook 4 min. Add tomatoes and oregano; cook 3 min. Stir in hot sauce.
Place fish in prepared dish. Season with salt and pepper. Top with peppers and onions mixture.
Bake 25 min., until fish flakes easily with fork. Spoon fish and pepper mixture onto plates; serve with rice.
