Brown-Sugar-Glazed Salmon

4 salmon fillets, 2" inches wide (approximately 1 ½ pounds)
¼ cup dark brown sugar, packed
2 teaspoons butter
2 teaspoons Dijon mustard
½ teaspoon salt
½ teaspoon ground black pepper

8 ounces snow peas, steamed
2 cups hot, cooked brown rice

  1. Heat oven to 325°. Line a baking sheet with non-stick aluminum foil. Place salmon in pan.
  2. Stir together sugar, butter, mustard, salt, and pepper. Spread evenly over fish.
  3. Put pan in oven and bake for 25 min. until fish flakes easily. Serve with snow peas and rice.
