4 salmon fillets, 2" inches wide (approximately 1 ½ pounds)
¼ cup dark brown sugar, packed
2 teaspoons butter
2 teaspoons Dijon mustard
½ teaspoon salt
½ teaspoon ground black pepper
8 ounces snow peas, steamed
2 cups hot, cooked brown rice
- Heat oven to 325°. Line a baking sheet with non-stick aluminum foil. Place salmon in pan.
- Stir together sugar, butter, mustard, salt, and pepper. Spread evenly over fish.
- Put pan in oven and bake for 25 min. until fish flakes easily. Serve with snow peas and rice.
