This is one of those two recipes we kept of the cookbook supplied by what was then a new idea in health insurance, the HMO. Healthy recipes, all!
2 fresh tomatoes, peeled and seeded
½ cup chopped onion
one clove garlic, minced
6 mushrooms, sliced
1/3 cup chopped parsley
¼ teaspoon dried thyme
4 fish fillets (4 ounces each) of cod, flounder, scrod, fluke, sole, snapper, or sea trout
Heat oven to 350°.
Chop the peeled and seeded tomatoes, mixing well with onion, garlic, mushrooms, parsley, and thyme.
Place the fish in the baking dish. Cover with tomato mixture. Bake for 20 min. Serve immediately.
