Alton Brown was the host of his cooking show, “Good Eats”, and still may be seen on The Food Network hosting his competitive cooking program “Cutthroat Kitchen”. He made this simple pea soup recipe on Good Eats, and as you can see, it was so simple I had no trouble writing it down as he was working on it. Cookng the onions in butter rather than in oil gave a tasty twist, wonderfully complementing the spices.
1 pound split peas
1 onion, chopped
2 cloves garlic, chopped
½ stick unsalted butter
½ teaspoon salt
¼ teaspoon ground black pepper
2 teaspoons curry powder
1 quart chicken stock
1 cup water
Sort peas and rinse in colander. Chop onion and garlic. Melt butter in a soup pot. Gently cook onions – “sweat them” – until soft. Add garlic, cook for 2 min. more. Stir in salt, pepper and curry powder and cook for 1 min. along with the onions. Add peas, stock, and water. Bring to a boil, and simmer for 1 hour or until peas are soft.
