Autumn Soup (Helen Nearing)

This is definitely a minimalist recipe, for a woman who was , like the name of her book, “Living the Good Life”. She and her husband Scott became homesteaders in a small town in Vermont. They built a house themselves, made of local stone. They lived off the grid (not that there was a “grid” when they moved there), heating their home with a wood stove and growing much of their food. So, really, make this any way you like, chopping, shredding, adding soy sauce or lemon, and then cook it as little or as much as you like. Life is good.

1 cup finely shredded cabbage
1 cup chopped celery
1 cup chopped broccoli
½ cup chopped parsley
4 cups boiling water
a dash of soy sauce or lemon juice

Put vegetables in a large pot, add boiling water. Add soy sauce or lemon juice. Cover and cook for ½ hour
