Black Beans and Pork

1 ½ pounds boneless pork loin, trimmed and cut into ½" cubes
1 teaspoon chili powder
1 teaspoon ground coriander
½ teaspoon salt
½ teaspoon pepper
1 onion, chopped
2 cans (15 ounces) black beans, drained and rinsed
1 can (14.5 ounces) diced tomatoes with green chilies
¼ cup chopped cilantro

Cooked rice

Put 1 ¼ cups water into crockpot; stir in salt, pepper, chili powder, and coriander until well mixed. Add pork and stir. Stir in onions, beans, and tomatoes. Cover and cook on high 4 hours or low, 6 hours.

Stir in cilantro. Using a potato masher, mashed beans slightly until mixture is thickened.

Serve over rice.
