Cuban Pork Sandwiches

This is a different quintet, a quintet of pork recipes. The pork quintet consists of a basic recipe elaborated into one of the following five recipes:
Creamy Pork with Mushroom Sauce;
Cuban Pork Sandwiches;
Asian Barbecued Pork;
Chipotle-Mango Pulled Pork;
Spiced Indian Style Pork.

3 pounds boneless, skinless pork shoulder
½ teaspoon salt
½ teaspoon black pepper
¼ cup tomato paste
2 cups low-sodium chicken broth
½ cup fresh orange juice
¼ cup fresh lime juice
zest of 1 lime
½ cup diced dill pickles
2 sweet onions, thinly sliced
3 cloves garlic, minced
¼ cup chopped cilantro

Sliced deli ham
sliced Swiss cheese
dill pickles, sliced
yellow mustard
Panini, Italian, or soft Cuban bread

Season pork with ¼ teaspoon of the salt and ¼ teaspoon of the pepper. Heat vegetable oil in a large skillet on medium-high. Brown all sides of pork, 6 – 8 min. Set aside.

In crockpot, mix tomato paste, chicken broth, orange juice, lime juice, and lime zest. Add diced pickles, chopped onion, and garlic. Place browned pork on top. Cover and cook on high 6 hours or low, 8 hours.

At the end of cooking, add cilantro. Slice the meat and assemble the sandwiches – ham, Swiss cheese, pork, and sliced pickles, all topped with yellow mustard.
