Turkey Chili with Corn

I made up this recipe, based on stuff I had in the house at the time, as well as try to make it mild enough for my kids. The result comes out a bit… beige, which is why I thought adding tomatoes or other colorful ingredients would improve the chili.

1 onion, chopped
1 clove garlic, chopped
1 – 2 tablespoons olive oil
1 ½ pounds ground turkey
1 ½ cups chicken broth
1 can (4 ounce) chopped green chiles
1 teaspoon chili powder
½ teaspoon salt
4 ounces frozen corn kernels
¼ cup cornmeal
½ cup water

Sauté onion and garlic in oil until onion is translucent; add turkey and brown, breaking up lumps as you cook. Add chicken broth, chiles, chili powder, salt, and corn. Simmer for 30 min. or more. Remove from heat, combine cornmeal and water, and pour the mixture into the pot while stirring. Put back on the heat and simmer, stirring until chili is thickened. Serve over rice.

(Try adding tomatoes or red bell pepper or even spinach for color and interest.)
