Crispy Baked Halibut (or in a pinch, chicken)

1 ¼ pounds fresh or frozen halibut steaks, cut 1" thick,
OR
4 boneless, skinless chicken breasts (about 2 pounds, total)
2 teaspoons cooking oil
¾ cup breadcrumbs
2 tablespoons grated Parmesan
½ teaspoon dried tarragon, crushed
½ teaspoon paprika
a dash of ground black pepper

Heat oven to 450°.

Thaw fish, if frozen. Cut fish into 4 portions; pat dry and brush with cooking oil. In a shallow baking dish stir together breadcrumbs, Parmesan cheese, tarragon, paprika, and pepper. Coat fish or chicken on both sides. Arrange in a 12" x 7.5" x 2" baking dish. Sprinkle leftover crumb mix on top.

For fish: bake for 8 – 12 min. or until fish flakes easily with fork.

For chicken: bake for 20 min., or until internal temperature reaches 165°.

Do not turn during baking. Garnish with lemon wedges)
